Recipes


Salvelinus Fontinalis*

Spicy Tequila Chicken
marinated for 5 hrs with
2 tbs soy
1 tbs chili paste
1 tsp worshteshire sauce
3 tbs olive oil
1.5 shots of tequila
dash of salt
pepper
oregano
thyme
rosemary
basil
4 cloves of garlic finely sliced
1/4 cups of finely chopped onion
1/2 lemon juiced and then throw lemon zest into bag
Throw all ingredients into a large ziploc bag as well as two large chicken breasts.
Leave in fridge for 5 hours. Grill until done.
(I have never really measured for this recipe, just sort of thrown it all together until the color of the marinade looks right)

Garlic Onion Burgers
97% fat free hamburger
2 dashes of worshtershire
salt
pepper
lawry's salt
oregano
steak seasoning Mrs. Dash
3 tbs onion
2 cloves of garlic
1 jalepeno pepper finely chopped.

toasted sesame bun
+miracle whip

toppings/condiments lettuce, tomatoes, pickles, onions, mustard, and ketchup

BLT
bacon
lettuce
tomatoes (fresh from the tomato lady at the farmer's market)

Caprese
tomatoes (fresh from the tomato lady at the farmer's market)
basil (fresh from farmer's market)
fresh cheese curds from kalona, ia dairy (i know it should be mozzarella)
Slice all three and layer.
top with
olive oil
salt
Serve at room temperature.

Lemon Herb Trout
brush olive oil on two pieces of aluminum foil and the trout
salt and pepper the fish
finely chop rosemary, thyme, oregano and combine with a few cloves of garlic that have been finely chopped. Think of it as a garlic herb pesto. Rub mixture onto the fish.
place a few slices of a finely sliced lemon on top.
turn up the ends of the foil to make a nice pouch
i cooked two pieces for 20 min in the oven at 325.
Remove from aluminum foil pouch drizzle some olive oil over the fish, add some salt, and served with a lemon wedge.

Green Bean Almondine
fresh green beans (farmers market)
Steam 1lb green beans
Seperately, combine 2 tbs finely chopped onions, 1/4 cup of sliced almonds, and 3 tbs olive oil in med heat pan for a few minutes.
add salt and 1 tbs lemon juice to the almond/onion mixture and top the green beans.
