We had an athletic filled weekend. This was taken Saturday night at the football game. We planned on making it to the Field Hockey which was slated for 3pm, but they rescheduled to 1pm, so we missed the game.

Chicken

I made my an interesting chicken meal yesterday.
Tequila Chicken
2 Chicken Breasts marinated for 4 hours.

Marinade
1/2 Red Onion Chopped
1/4 White Candy Onion Chopped
1 handful chives chopped
6 cloves of garlic chopped
1/2 lemon, squeezed and slice remaining
1 handful of oregano
2 tablespoons Sriracha (garlic chile sauce)
1 tablespoon Volcano Hot Sauce (Scotch Bonnet Peppers from St. Thomas)
4 tablespoons olive oil
2 shots of tequila
Salt and Pepper to Taste
I prefer using a large ziploc bag for the marinade but whatever works.

Heat another 2 tablespoons of olive oil in a pan on med/high heat. And throw everything from the marinade in the pan including the onions and lemon. Cook approx 8 minutes and Voila!

We are inviting all of you to the Millstream Brewery in Amana, Iowa, to dine together! The catch is that it is a potluck - trust us, you don’t want Teresa cooking for you!

Please bring a dish that you prepared using beer as an ingredient. We are going to turn our warehouse into a picnic area to serve all the unique dishes people bring to the table. We will have Nick Stika playing classic rock and roll music for your entertainment outside while you enjoy your meal. Table service will be provided for your choice of refreshing Millstream beverages.

All you need to bring is your beer dish and the recipe so others can copy it. We’ll bring the copy machine down so you can copy your favorite recipes. Also we will have a ballot box for a people’s choice award on your favorite dish. The winner will receive a free case of beer!

So come join us on Sunday, August 19th. We will begin the meal at 1:30 pm so please bring your dishes before then so everyone can enjoy the fine food. See all of you great cooks then!

Now this sounds like a good time.

Shellie and I went out to the Airport National Public Golf Course in Cedar Rapids to the Waterfall Mini Golf Course. Good clean fun. There were a lot of people there and with the option of having beer on the course plenty of twenty-somethings as well. I took a couple of photos as well which are up on my flickr site.

Shellie and I went in search of some beer from the New Belgium Brewing Company, specifically Fat Tire. We had the beer at our friends wedding in Omaha but haven't found it since. We went to John's Grocery in town which is very well known throughout the midwest for its selection as the owners are very interested in beers and wine. In fact the group is now in Europe looking for beers to add to their selection. Unfortunately no one in Iowa can carry the line. Soon enough the company will bring their beer to Sioux City as I read. After finding the Sioux City Brew Blog (awesome site by the way), I was given a tip that South Sioux City Nebraska carries the beer. Sure enough we will be enjoying the brew as we celebrate our Indepence.
